Most of our produce is home grown:

organic oil from our farm
vegetables from our vegetable patch
eggs from our hen house
local produce such as flour from the Val D’Orcia Mill
simple and intense flavours are the result of fresh and high quality ingredients.

We offer typical menus from our local tradition from homemade pici to ribollita soup, scottiglia meat and castagnaccio , a chestnut pie. Saba’s experience allows us to accommodate all our guests needs.

Mount Amiata generously offers fresh produce such as porcini and ovoli mushrooms , truffles and chestnuts which plunge our guests into a vortex of Tuscan taste and local traditions thanks to their flavours and scents.
Our land enriches our olives, juiced at low temperatures, and our local grapes with unique and unrepeatable notes.

Guests can discover the secrets of local Tuscan homemade cuisine with Saba , a local cook , or try revisited traditional dishes with the Japanese chef Hiroichiro Shikata.
From homemade pasta to sauces prepared with our guests following old recipes to the rhythm of sizzling olive oil.

great care is also taken when choosing the wines we offer, from Brunello di Montalcino to Orcia doc, all from the best local wineries.
